The Fresh Horizons - Rachel Philp
Already the owner of a hugely successful fine foods enterprise in Forres, Rachel Philp decided the potential for a new venture at the business park was too good to miss.
The Fresh Horizons café was refurbished and re-launched in just two weeks - the site was transformed and a new catering kitchen installed, which allows her to prepare everything on the menu daily.
“I didn’t make a conscious decision to move here, but when the offer came up to take over the café it wasn’t a hard decision. I could see a gap in the market for fresh home-made lunches and snacks that I knew I could fill.
“I had been supplying catering to Horizon Scotland for more than two years for both in-house events and tenant’s meetings, so I was well aware of the clientele who frequented the cafe. We now encourage ‘eating in’ and use crockery and cutlery as opposed to takeaway containers. Any takeaway containers we do use are compostable, however, in a bid to reduce our contribution to landfill.
“Since opening, we are finding that the café is attracting increased external business – more and more people are using us every day. We have seen an upturn in local networking groups using the social space, hopefully encouraged by the great coffee and tasty snacks.”
Rachel uses only the freshest local ingredients, and everything is prepared and cooked daily on the premises.
“I try to offer a balanced selection of hot and cold foods and, although I removed toasties and paninis from the menu, I am confident they have been replaced by more nutritious and interesting options such as our weekly special sandwich fillings and a hot food choice every day.
“My future plans for the café are more of the same really. I would love to see more local businesses and groups using Horizon Scotland for their meetings and training courses. It really is a great environment, relaxed and informal in the social space, yet professional and well-equipped in the meeting rooms.
“I like the fact that most of my customers are pushed for time in their lunch hour, but that I can provide a tasty break for them without having to venture into Forres. Everyone is so friendly and I’ve made some great new friends in the time I have been here.”
